1/2 cup EVOO
1/3 cup red wine vinegar
2 tbsp lemon juice, fresh
1 tsp Dijon mustard
1 tsp garlic, minced
1/2 tsp oregano, dried
1/4 tsp kosher salt
1/4 tsp black pepper, ground
In small mixing bowl, whisk all ingredients together
Use immersion blender or hand mixer to emulsify dressing
