1 head cauliflower
¾ cup water
¾ cup whole grain flour (or flour of choice)
2 tsp garlic powder
1 tsp paprika
1 tsp kosher salt
½ tsp black pepper, ground
¼ cup hot sauce
1 TBL unsalted butter, melted
1 TBL honey
1 tsp fresh lemon juice
Buffalo Sauce Ingredients
Preheat oven to 450oF.
In large mixing bowl, mix all batter ingredients. Batter should be thick like a paste.
Cut cauliflower florets into 2” pieces.
In small mixing bowl, mix all buffalo sauce ingredients.
Add cauliflower florets to bowl with batter and toss well. Ensure florets are evenly covered with batter.
Place individual battered cauliflower pieces onto sheet pan. Be sure to spread apart and not overcrowd.
Bake for 20 minutes, flipping and redistributing half-way through.
Remove cauliflower from oven. Pour or generously brush buffalo sauce on battered cauliflower.
Return to oven and bake until crisp, about another 15 minutes. Turn up oven temp for additional crispiness.
Best enjoyed hot and crisp right from the oven.
TIP: Stays fresh in fridge for 3 days. Can be reheated. Air fryer works great!
TIP: Serve with carrots, celery sticks, and Ranch or Blue Cheese dressing for dipping!
